How to make it

Combine all the ingredients for the dressing and whisk.
Cook the noodles till al dente, and then run under cold water and drain. Place in a bowl with the carrot, snowpeas, tomato, spring onions and coriander.
Heat the oil and cook the prawns until pink and firm, then toss into the bowl with the vegetable and dressing.
