How to make it

Leaving the skin on, cut the cucumbers in half, and slice them with a vegetable peeler into thin strips and place in a bowl.
Whisk the remaining ingredients for the salad together and pour over the cucumber.
Leave to steep for 10 minutes.
Place the salmon on a plate with some of the salad and serve immediately.
