Mix together marinade ingredients, add pork and mix well. Cover and refrigerate for at least 30 minutes up to overnight.
In a hot wok or pan, heat oil and add onion and ginger, fry until fragrant, then add pork, stirring till cooked through.
Add bok choy, cashews and Lee Kum Kee Teriyaki Stir Fry Sauce. Heat until greens wilt a little and then add noodles, tossing to coat. Fold through coriander and shallots.
Serve and garnish with sesame seeds and more shallots.
