In a bowl, combine the pork with the oyster sauce and sesame oil. Mix well and set aside for 15 minutes.
Meanwhile, cook the noodles in boiling water according to package directions. Drain and transfer to a serving bowl.
Heat a film of oil in a large frying pan or wok, stir-fry the onion and carrot for a few minutes before adding the pork to the pan, turn until coloured.
Add in the black bean garlic sauce and water and simmer for 5 minutes. Thicken with the cornflour mixed with water.
Serve the noodles topped with the pork mixture. Top with cucumber strips and sesame seeds.
Tip: Sprinkle with fresh herbs such as coriander if you like and serve with steamed greens alongside.
