Marinate pork loin with 4 tbsp. Lee Kum Kee Hoisin Sauce, mustard and 2 tbsp. canola oil for 15 minutes.
Grill pork until done. Cover and set aside.
Combine remainder Lee Kum Kee Hoisin Sauce, rice vinegar, canola oil and black pepper in a mixing bowl (hoisin sauce vinaigrette). Mix well and set aside.
Assemble tomato, red onion, cucumber and grilled pork loin in a platter.
Serve pork platter with Lee Kum Kee Hoisin sauce vinaigrette.
