Roasted Chicken with XO Sauce
What You Will Need
Ingredients
- 1 kg Chicken (2 pcs, or Spring Chicken)
- 400 g Potato(es) (2 pcs)
- 3 pcs Chinese mushroom(s) (soaked and diced)
- 3 pcs Green onion(s) (diced)
Marinade
- 3 tsp Salt
- A pinch White Peppercorn Powder
Seasoning
- 3 tbsp Lee Kum Kee XO Sauce
- 2 tbsp Lee Kum Kee Premium Oyster Sauce
- 1 tbsp Water

How to make it
Marinate chickens for 30 minutes.
Put potatoes in boiling water and simmer until tender. Remove skin and mash.
Saute mushrooms and green onions in 2 tbsp oil. Add mushrooms, green onions and seasoning mix to mashed potatoes. Mix well.
Stuff potatoes into chickens. Seal the tails of the chickens with skewers.
Bake chickens at 190°C [375F] hot oven for 30-35 minutes until done, turning once.
