Oyster Sauce Pork Ribs & Cucumber Salad

How to make it

Combine all marinade ingredients together and mix well, add pork ribs, coat well and refrigerate for at least 30 minutes or overnight.
Place ribs on a rack in a slow oven of 125°C for 40 minutes, rotate, baste and return to the oven for another 40 minutes. Rotate, baste, turn up the heat to 200°C and cook the ribs for a further 10 minutes, or until charred. Remove from heat and set aside.
In a small bowl, add cucumber salad dressing ingredients and whisk together well. Pour over cucumber and serve immediately, together with ribs, lime wedges and chopped herbs.
