How to make it

  2. Place the chicken pieces into a bowl. Add the marinade ingredients and toss to thoroughly coat. Let marinate for a minimum of 1 hour (or overnight for maximum flavour).

  3. Thread the skewers by alternating the chicken thighs and spring onions.

  4. Place the chicken skewers in the air fryer basket (you may need to cook the chicken in batches depending on the size of your air fryer). Air fry at 200°C for 10 minutes. Check the chicken is cooked through by cutting a middle piece—no pink should show.

  5. Serve on a bed of cucumber noodles and carrot ribbons, drizzle over some Lee Kum Kee Chiu Chow Style Chilli Oil.
  6. Tip: Forextra flavour, add chilli, lime (zest and juice), toasted sesame seeds and Lee Kum Kee Pure Sesame Oil to the cucumber noodles.
