Char Siu Meatballs with Rice Noodles

How to make it

  1. In a bowl combine meatball mix ingredients. Roll the mix into tablespoon sized meatballs. 
  2. Heat oil in a wok over medium heat. When it starts to smoke add 8 meatballs to the wok (you’ll need to work in batches). Allow the meatballs to sit for 2 minutes to slightly char then move with a spatula until fully cooked, about 5 minutes. Repeat with remaining meatballs. Return all meatballs to the wok and add seasoning mix, then toss the meatballs to cover. 
  3. Cook rice noodles as per packet instructions then divide between 4 bowls. Top with meatballs and garnish. Yum!
  4. Variation: If you want an extra healthy dinner then simply spiralize and quickly blanch zucchini instead of noodles.
