Toss the chicken with 2 tbsp Lee Kum Kee Panda Brand Oyster Sauce. Place the chicken thighs on the air fryer rack. Cook for 8 minutes at 180°C. Remove from the air fryer to a chopping board to rest. Then place the bacon on the air fryer rack. Cook for 6 minutes at 180°C. Transfer bacon to the chopping board, let cool.
Chop chicken and bacon into bite sized pieces.
Microwave rice pouch as per packet instructions. Pour into a large bowl and let cool. Combine sauce mix.
Stir rice, sauce mix, prepared vegetables, chicken, bacon and whisked egg together until well combined. Season with salt and pepper. Transfer to a nonstick ovenproof pan that fits your air fryer basket (depending on the size of your air fryer you may need to work in batches). Cook at180°Cfor 18 minutes, stirring every 6 minutes, until rice is crispy and delicious.
Serve fried rice topped with garnishes. Yum!
