Pork Spaghetti with Bok Choy

How to make it

  1. Cook the spaghetti according to packet instructions in a large pot of boiling salted water.  Once cooked, drain well, reserving about a cup of the pasta water.

  2. At the same time, in a large bowl, mix together mince, onion, garlic, ginger, half of the soy and oyster sauces and half of the sesame oil. Add the cornflour and white pepper. Mix until well combined.

  3. In a large frying pan or wok over a medium-high heat, add a little oil and stir fry the pork until well coloured.

  4. Once this is done, toss the spaghetti into the pan, adding a little of the pasta water and mix through. Stir in the remaining soy and oyster sauces and sesame oil. Taste and add a little more soy if you like.

  5. Heat a drizzle of oil in a large frying pan or saucepan over a medium-high heat and quickly cook the bok choy until just tender.

    Serve the spaghetti and pork with bok choy alongside.  Garnish with chives, fresh chilli and drizzle with a little chilli oil.

  6. Tip: Use green beans, broccolini or broccoli instead of bok choy if you would rather.
