How to make it

  1. In a large pot, heat oil and sauté onion until soft.
  2. Add pumpkin, chilli, cauliflower, and Lee Kum Kee Ready Sauce for Coconut Curry Vegetables, stir thoroughly and sauté for 5 minutes. 
  3. Stir through the coconut milk. (Optional)
  4. Cover and simmer for 20 minutes or until the vegetables are tender.
  5. Add lime juice, then stir. Season to taste, adding more lime juice, salt, and pepper as desired.
  6. Serve curry over cooked rice, garnish with fresh coriander and lime wedges.
