How to make it

In a bowl combine meatball mix ingredients. Roll the mix into tablespoon sized meatballs. 
Heat oil in a wok over medium heat. When it starts to smoke add 8 meatballs to the wok (you’ll need to work in batches). Allow the meatballs to sit for 2 minutes to slightly char then move with a spatula until fully cooked, about 5 minutes. Repeat with remaining meatballs. Return all meatballs to the wok and add seasoning mix, then toss the meatballs to cover. 
Cook rice noodles as per packet instructions then divide between 4 bowls. Top with meatballs and garnish. Yum!

Variation:If you want an extra healthy dinner then simply spiralize and quickly blanch zucchini instead of noodles.
