Honey Soy Chicken Burger with Green Mango Salad

Ingredients

Chicken Breast Fillets, sliced in half lenth-wise 2 pieces
Soft Buns, sliced 4 pieces
Small Lebanese Cucumber, peeled, deseeded and finely cubed 1 piece
Carrot, peeled and shredded 1 piece
Chinese White Readish (or Daikon), peeled and shredded 1 cup
Red Capsicum, finely sliced 1 piece
Green Mango, shredded 1 piece
Sesame Seeds 2 tbsp
Lime, zested and juiced 1 piece


Seasoning Mix

Oriental Honey & Soy 4 tbsp
Pure Sesame Oil 1 /2 tsp
Fish Sauce 2 tbsp
Mayonnaise 60 mL


Directions
1.   Brush 4 tbsps Oriental Honey & Soy on both sides of chicken and sprinkle with sesame seeds.
2.   Heat a non-stick frying pan over medium heat. Pan-fry marinated chicken fillets for 3-4 minutes on each side (take care not to burn the sesame seeds).
3.   Combine green mango, capsicum, white radish, carrot and cucumber, set aside.
4.   In a lidded jar combine 4 tbsps Oriental Honey & Soy, lime juice, lime zest, fish sauce and sesame oil and shake well. Pour dressing over the salad and toss well.
5.   Spread the bun with mayonnaise, add tender chicken fillets & top with salad. Serve immediately.
